Sweet Fire Sweet Potatoes

 

I love the flavors of fall, but sometimes it’s fun to spice things up a little!  These Sweet Fire Sweet Potatoes will liven up any meal.    A touch of jalapeno jelly adds just enough sweet mixed with a little heat to  add another layer of flavor to your usual sweet potato dish.

 

Sweet Fire Sweet Potatoes

Ingredients

2 pounds sweet potatoes, peeled and cubed (about 4- 4 1/2 cups)
1/3 cup jalapeno jelly
2 tablespoons red wine vinegar
2 tablespoons fresh lime juice
sea salt to taste
2 tablespoons fresh cilantro, chopped

Directions

Preheat oven to 450 F.

Spread sweet potato chunks on a lightly sprayed baking sheet.  Cover tightly with foil.  Bake for 15 minutes.  Uncover and continue to bake until potatoes are tender, stirring once (about 25 minutes).

While potatoes cook, heat jelly in a small sauce pan until it melts completely.  Add vinegar and stir until combined.

When potatoes are baked, remove from oven and drizzle with jelly mixture.  Use a spatula to turn and coat evenly.  Put sweet potatoes back in the oven and continue to cook until jelly mixture thickens and sticks to sweet potatoes, stirring as needed to prevent scorching (about 10 minutes).

Remove potatoes from oven and  slide potatoes into a serving bowl and drizzle with lime juice.  Sprinkle with sea salt and top with cilantro.  Serves 4-6.
