Summer Berry Crumb Bars
I am so ready for the lazy days of summer, and these Summer Berry Crumb Bars are the perfect way to celebrate! There is nothing here but fresh summer berries and an easy-to-make crumb crust. I used a mix of strawberries, raspberries, blackberries, and blueberries in this picture, but you can use one berry or whatever you have on hand. Pop it in the oven for a beautiful and delicious summer treat.
These didn’t last long at my house – I’m sure you’ll have the same problem.
Summer Berry Crumb Bars
Ingredients
1 1/2 cups plus 2 tablespoons sugar (divided use)
3 cups flour
1 teaspoon baking powder
1/8 teaspoon cinnamon
pinch of salt
1 cup butter, room temperature
1 egg. lightly beaten
4 cups fresh berries
1 tablespoon cornstarch
Directions
Preheat oven to 375. Line a 13×9 pan with parchment paper or spray well with cooking spray.
Combine 1 cup of the sugar, the flour, baking powder, cinnamon, and salt. Mix in the butter with a fork or pastry cutter. Cut in the egg until the dough is combined and crumbly. Pat half of the dough into the prepared pan.
Stir together the cornstarch and remaining 1/2 cup plus 2 tablespoons of sugar. Gently toss with the berries. Place the berries over the dough in the pan. Crumble the remaining dough over the top of the berries.
Bake for 45 minutes or until the top is slightly brown. Cool on a wire rack before serving.
