Pineapple Cheese Ball
So what’s Christmas without a good cheese ball – right? {We can’t exist completely on Christmas Cookies can we?} This Pineapple Cheese Ball is one of my favorites. It’s simple to make ahead and have on hand for parties or even to give as a gift. You can even freeze it and bring it out as needed. This recipe has been a tried-and-true favorite for generations!
The sweetness of pineapple blends perfectly with peppers and onions in cool, cream cheese. Finish it with fresh pecans and the flavors are fabulous! Fortunately this recipe makes 2 cheese balls – you’ll want one to eat at home and one to take!
Pineapple Cheese Ball
Ingredients
2 (8 ounce) packages cream cheese, softened
2 teaspoons seasoning salt (I use Lawry’s)
1 (6 ounce) can crushed pineapple, drained well
1/4 cup green pepper, finely chopped
2 tablespoons onion, finely chopped
2 cups pecans, chopped
Directions
Whip the cream cheese in mixer until smooth. Stir in the seasoning. Add the pineapple, peppers, and onions until combined. Divide the mixture into two and shape as desired (Logs or balls- or I usually make a small disc, I get more pecans that way!). Wrap with plastic wrap and chill in refrigerator overnight to allow the flavors to blend and the cheese ball to set up. Before serving, roll the Cheese Ball in chopped nuts. Serve with your favorite crackers.
Making this for sure. DH will love it. Think I’ll roll one in crisp bacon bits for my son who doesn’t eat nuts.
