Thai Chop Salad
So this Thai Chop Salad is how we have been eating lately. Our days are going a little like this: My kids continue to dress themselves out of the dryer (because I still have yet to fold that darn laundry), there are remnants of preschool graduation cupcakes all over my kitchen, we have begun swim team practice conveniently at dinner time, there are school projects and presentations scatter all over the kitchen table (forget all the trips to the school to watch said presentations), and honestly most days I’m sure that it is Friday and the week is over (I have yet to be right so far this week on that one). And as crazy as our days have become, we wouldn’t trade it for anything. However, we are eating a lot of salad and sandwiches for dinner these days.
Luckily for me this Thai Chop Salad is super easy, and I usually have these ingredients on hand most days of the week; making for a quick dinner salad. Of course, as always salads at our home are customized to order. There always has to be the one kid who won’t eat something, right. 😉
Thai Chop Salad
Ingredients:
8 cups mixed salad greens
1 1/2 cups chopped cooked chicken
1 avocado, seeded, peeled and cut into 1/2 inch pieces
shredded carrots
1 red pepper, chopped small
cilantro leaves
thinly sliced green onions
honey roasted peanuts
Dressing:
1/2 cup bottled Zesty Italian salad dressing
1 1/2 Tablespoons soy sauce
1/4 teaspoon ground ginger
1/4 – 1/2 teaspoon crushed red pepper flakes
Directions:
Whisk together all the dressing ingredients and set aside or refrigerate until ready to use.
Build your salad to your like and top with the dressing.
Looks and sounds delish! I love salads, especially when the weather is warmer.
