Happy Pi Day!  Happy St. Patrick’s Day!  Happy Any Day is a Good Day for Ice Cream Pie Day!

Today is March 14, Pi Day – not the “pie” you eat, but the mathematical “pi”- you remember 3.14159…  I know – High School math was a while ago, but it sure seems like a good enough excuse for an ice cream pie, and since St. Pat’s is right around the corner, what better way to celebrate than with a Grasshopper Ice Cream Pie!

You actually don’t need a reason to make this pie-  1. Because it’s super easy to make, and 2. Mint Chocolate Chip Ice Cream and Oreo is perfect for any day of the year!  That signature green is beautiful for St. Patty’s or Christmas Day and always a huge success on hot summer afternoons!

Grasshopper Ice Cream Pie

Ingredients

For the Crust (or use the Oreo premade crust)

22 oreos finely crushed
3 tablespoons butter, melted

For the Filling

1/2 gallon Mint Chocolate Chip Ice Cream (get the good stuff)

For the Topping*

1 cup heavy whipping cream  (or just use Cool Whip)
2 tablespoons powdered sugar
hot fudge sauce (or chocolate syrup)
Mint Chocolate Chip Oreos , broken in half
Andes Mints

Directions

Preheat oven to 350.  Mix oreo crumbs and butter and press into a 9 inch pie plate.  Bake 8-10 minutes.  Cool completely.

For the filling- allow ice cream to set out for about 10 minutes or until it is soft enough to stir.  (Can use microwave on defrost).  Spoon ice cream into crust and freeze until hard or at least 2 hours.

When ready to serve whip cream with powdered sugar until soft peaks form.  (Or use Cool Whip).  Spread over ice cream and drizzle with hot fudge.  Top with broken mint Oreos and Andes Mints.

*Note:  You could just serve the pie without the whipped cream and garnish – just drizzle with a little chocolate syrup or hot fudge.
