Chocolate Chunk-White Chocolate Chip Cookies
I have a sweet little four year old that loves to argue about how much she loves me. She will tell me that she loves me more than I love her; even though that could never be true. She gets very excited to proclaim her love to me. This proclamation is usually followed with a request; not always but often. She knows how to work it. A few days ago this little love fest was followed with the request to make something in the kitchen, a treat to be exact. These cookies were the product of that afternoon. I’m sure my other kids were thrilled with persistence; as they enjoyed fresh from the oven cookies after school.
The best part about these cookies, other than their pure deliciousness, is that there is no need to get out the mixer. Yes, that is right, put away the stand mixer and use a little muscle on these cookies. Because let’s be honest if you are anything like me you can’t refuse warm fresh cookies.
Chocolate Chunk-White Chocolate Chip Cookies
Ingredients:
3/4 cup brown sugar
3/4 cup butter
2 large eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
5 ounces semi-sweet chocolate bar, chopped
2/3 cup white chocolate chips
1/4 cup chopped walnuts
Directions:
Preheat oven to 375. Combine brown sugar and butter in a large microwave-safe bowl and heat on high until soft, about 30-40 seconds. Whisk in the eggs and vanilla and mix well. Add the flour and baking soda and stir until well mixed. Stir in the semi-sweet chocolate pieces, white chocolate chips and walnuts.
Spoon well-round teaspoons of cookie dough onto an ungreased baking tray and bake until cookies are slightly brown on top; about 9-11 minutes.
