Chocolate-Peanut Butter Chex Mix
Let the Games Begin! Are you excited to watch the Olympics this weekend? What a fun family activity; and this cold weather we have been having makes it all the better to stay -in and keep warm! You can go to this site and type in your zip code to get a listing of broadcasts in your area.
Of course you’re going to need a little snack food to gnosh on. This Chex mix is absolutely our favorite! If your follow our blog you know we have a love affair with peanut butter and chocolate-Now think crunchy Chex and Golden Grahams, plus coconut and almonds covered in a sweet ooey-gooey peanut butter sauce.
If that’s not enough to get you drooling, add to the mix some sweet chocolate chips! {Seriously, we can’t keep our hands off this stuff!}
As you can see, it makes enough for a party!
We actually posted this sweet mix as one of the first recipes on this blog – but since we didn’t have a clue what to call it, really didn’t know what we were doing, and the picture wasn’t great it has just gotten buried and forgotten {sad sigh}. However, because we want you to love it as much as we do, we decided to re-name, re-photo, and re-post this amazing {and addictive} snack mix! I’m sure you’re going to thank us for it!
Chocolate-Peanut Butter Chex Mix
Ingredients
1 Box (12 oz) Gold Grahams Cereal
4 Cups Chex Corn Cereal
4 Cups Chex Rice Cereal
1 Package (2 oz) Sliced Almonds
1/2 Cup Coconut
1/2 Cup Butter
1 Cup Sugar
1 Cup Corn Syrup
1/2 Cup Peanut Butter
1 Cup Milk Chocolate Chips
Directions
Lightly butter two large sheet pans.
Mix the Cereals, Almonds, and Coconut in a large mixing bowl (at least 6 quart), set aside. Melt the Butter, Sugar, Corn Syrup and Peanut Butter together in a sauce pan. Heat on Medium High heat, stirring constantly until it comes to a boil. Continue to stir and let it boil 2 minutes. Slowly pour the sugar mixture over the cereal mix – gently stir to coat. Wait 1-2 minutes. Now add the chocolate chips (mixture should still be warm enough to melt them a little but not completely).
Pour out the mixture onto the prepared pans and spread out so it doesn’t all stick together. When cool, break apart and store in an airtight container. Let the fun begin!

I have a recipe similar but not with the peanut butter. Can’t wait to make this!
Will try making with gluten free cinnamon Chex instead of golden grahams.
