For the past couple of weeks I have hinted about this fabulous grilled Bacon and Pimento Cheese Sandwich.  Just before Christmas a friend insisted on driving 30 miles to have a sandwich which she said, “would change my life!”  I was game and since we headed to a cute little historic town with plenty of shopping- I knew it would be a great day no matter.  She was right, the sandwich was amazing!   I was sure my son would love it too, and  I really wanted him to try it when he was home for Christmas.  However, I also realized  he would never drive 30 miles for a sandwich {the shopping was no incentive here either …}  So I worked on a recipe for Pimento Cheese and Candied Jalapenos in order to  recreate the experience for him and for you.   {Yes, he loved it more than me!}  Note, both the pimento cheese and candied jalapenos are great staples to keep in the frig for all kinds of sandwiches and entertaining.

Here is the combination:  Good molasses or honey-wheat bread, homemade pimento cheese, bacon, and candied jalapenos.  To finish it off – apricot jam!

If you’re starting to doubt- dont!  Just give a try.   I promise – grilled cheese never tasted so good!  This is perfect for a lazy weekend afternoon watching your favorite game or the Olympics!

 

Grilled Pimento Cheese with Bacon and Candied Jalapenos

The Ultimate Grilled Bacon and Pimento Cheese Sandwich with Candied Jalapenos

Ingredients

Bakery Style Molasses or Honey-Wheat Bread
Apricot or Peach Jam
Homemade Pimento Cheese – recipe here
Candied Jalapenos – recipe here (easy, but need a week ahead)
Bacon, cooked and drained
Butter for toasting

Directions

Spread bread with jam.  Add a generous amount of pimento cheese, jalapenos, and bacon.  Butter the outside and toast on a griddle like a regular grilled cheese sandwich.  Prepare for a truly remarkable taste sensation!!
