Roasted Jalapeño Popper Dip with Bacon

If you are a fan of jalapeño poppers, you know how great and addictive they can be. This Roasted Jalapeño Popper Dip with Bacon gives you the same great flavor in an easy-to-make dip. This dip will be perfect for game day!
First, you are going to roast the jalapeños to bring out that wonderful flavor, and then combine that with bacon {of course, because everything is better with bacon – right?} , cream cheese and cheddar for a fabulous dip. Better yet, you can make it ahead of time and just pop it in the oven to bake before you need it. Then just grab a bag of chips and dig in!
Roasted Jalapeño Popper Dip with Bacon
Ingredients
8 jalapeños. halved and seeded
1 tablespoon olive oil
2 (8 ounce) packages cream cheese
1/2 cup sour cream
1/2 cup mayo
6 slices of bacon, cooked and crumbled
1 1/2 cup shredded cheddar cheese
1 cup crushed tortilla chips
Directions
Pre-heat a broiler or grill to medium-high. Toss the jalapeño halves with the olive oil and roast under the broiler or char on the grill until softened and blackened, about 3 minutes per side.
Turn the oven to 400ºF. Let the peppers cool enough to handle them, then chop them up. In a large mixing bowl, combine the cream cheese, sour cream, mayo , the crumbled bacon, the chopped roasted peppers, and 1 cup of cheddar cheese. Transfer the mixture to a 1 1/2 or 2 quart baking dish and top with the remaining shredded cheese and crushed chips. Bake the dip until golden brown and bubbly, about 20 minutes. Serve with chips and/or veggies.
