Sweet Potato Bread with Praline Topping
There is already candy everywhere in my house. Halloween is still just over a week away and candy is already taking over. I’m not sure how this is already happening but it is frightenly a reality. I love a little sweetness every now and then {or a lot of the time} but sometimes I need something a little more sophisticated than candy.
This Sweet Potato Bread with Praline Topping is just that sophisticated sweetness that just hits the spot perfectly. The bread itself is not overly sweet, and the praline topping takes it up a couple of notches to perfect. This recipe will not disappoint, I promise.
Sweet Potato Bread with Praline Topping
Ingredients:
1 cup mashed cooked sweet potato
2 eggs
1 3/4 cup flour
2 tsp. baking powder
1/2 tsp salt
1 cup of sugar
1/2 cup vegetable oil
5 Tbls. buttermilk
1 tsp vanilla
1 tsp cinnamon
1/4 tsp ground nutmeg
Praline Topping:
4 tbsp unsalted butter
1/2 cup brown sugar
1/4 cup heavy whipping cream
1/2 cup chopped pecans
Directions:
Preheat oven to 325. Grease and flour (or use cooking spray with flour) a 9 x 5 inch loaf pan. Set aside.
Combine the dry ingredients in a mixing bowl, gently combine. Then add the sweet potato, eggs, oil, buttermilk, and vanilla. Bake at 325 degrees for 60-70 minutes or until golden brown.
Prepare the praline topping by combining the brown sugar and butter in a small saucepan. Heat until the sugar is dissolved on medium heat. Once the sugar is done, add the whipping cream and stir until smooth. Mix in the pecans then pour over the bread while the bread is still warm. Let cool before cutting.
