Peanut Butter Waffles
Why spread peanut butter on top of a waffle when you can put it right inside? These waffles boast a boast a nutty flavor that any peanut butter lover will find irresistible. Of course top these waffles with whatever you choose, but don’t peanut butter and chocolate go perfectly together?
Peanut Butter Waffles
Ingredients:
1 2/3 cup flour
1 3/4 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1/2 cup peanut butter
2 large eggs
2 cups buttermilk, at room temperature
2 Tbls. brown sugar
2 Tbls. butter, melted and cooled slightly
Directions:
Preheat waffle iron.
In a large bowl, whisk together the flour, baking powder, salt and baking soda until well combined.
In a medium bowl, whisk together the peanut butter and the eggs. Add the buttermilk and brown sugar and whisk until the sugar dissolves. Gradually whisk in the butter.
Pour the liquid ingredients into the dry ingredients and whisk gently just until the batter is evenly moistened There will be some small lumps in the batter. The batter will be quite thick.
Pour batter into the waffle iron according to the manufacturer’s recommended amount into the center of the waffle iron. Use a rubber spatula to spread the batter about 1/4 inch from the edge. Close the lid and bake the waffle until nicely browned. Remove the waffle and continue baking until the batter is gone.
