Peaches Foster
Here is a twist on the classic Bananas Foster, but made with peaches instead. Warm fruit in a sweet glaze served with vanilla ice cream is a perfect end to any meal. So be sure to stock up on those fresh peaches you see around the grocery stores, because you are going to want to make these Peaches Foster frequently. It takes little effort and not much time to throw this together.
Peaches Foster
Ingredients:
3 Tbls. butter
2/3 cup dark brown sugar
7 Tbls. pineapple juice
1 Tbls. molasses
2 Tbls. heavy cream
1 tsp. vanilla
pinch of salt
3 peaches, peeled, pitted and halved
vanilla ice cream
Directions:
In a 10 inch cast-iron skillet, melt butter over moderately high heat. Stir in brown sugar and cook until sugar dissolves, about 8 minutes. Stir in pineapple juice and molasses and bring to a boil. Stir in cream, vanilla and salt. Add peaches and spoon sauce over each half. Place one or two peach halves in each bowl, top with a scoop of ice cream and spoon additional sauce over the top.
