Grilled Skirt Steak Tacos with Spicy Red Onion Guacamole
Yesterday I told you all about the wonderful food I served at a dinner party with some of our friends and family. And I mentioned that we served this delicious steak and guacamole. My four-year old was running in and out of the house and every time she came in she grab a slice of steak of the counter and ran back outside with it. And when I caught her red-handed she told me it was just too good. What a silly little girl, but oh was she right. This steak is just too good.
The only thing I did different from the original recipe was that I marinated it longer. Because of time constraints I had to prepare it earlier in the day.
The original recipe is delicious the way it is, but of course I like to add all the traditional taco fixings; lettuce, cheese, tomatoes, etc. And of course the guacamole is great with chips just as you would expect. Either way you are going to want to grill this up for dinner tonight.

Grilled Skirt Steak Tacos with Spicy Red Onion Guacamole
Ingredients:
1-1/2 pounds skirt steak, trimmed
2 teaspoons chipotle chile powder
1-1/2 teaspoons salt, divided
4 tablespoons fresh lime juice, divided
3 tablespoons vegetable oil
2 avocados from Mexico, halved, pitted and peeled
1/4 cup finely chopped red onion
1/4 cup chopped fresh cilantro
1 jalapeno pepper, seeded, finely chopped
12 warm corn or flour tortillas
Directions:
Rub the steak with chipotle powder and 1/2 teaspoon salt. In a large resealable plastic bag, mix 3 tablespoons of the lime juice and the oil. Add the steak, seal the bag and marinate 15 to 30 minutes. (or longer)
Meanwhile, in a medium bowl; mash the avocado with remaining 1 tablespoon lime juice, the cilantro, jalapeno, and 1 teaspoon salt. Cover and refrigerate.
Heat grill to high. Just before serving, remove steak and pat dry; discard marinade. Grill steaks to medium-rare, about 2 minutes per side. On a board, thinly slice the steak against the grain; serve on tortillas, topped with guacamole.
