Chocolate Chip Pecan Pie Cookie Bars
It’s Friday and its been a long hard week. Time to gather with family and friends and appreciate the good in life.
If that gathering involves food you might want to include these Chocolate Chip Pecan Pie Cookie Bars- all the ooey-gooey goodness of pecan pie plus chocolate and a brown sugar crust! I guess that about says it all except that they are “easy as pie” to make. Don’t take that wrong {whoever invented that saying obviously never made a pie from scratch}. These cookie bars are very easy to make and incredible yummy. I guess the better phrase would be “Pie in the Sky” – indicating something good to come!
Chocolate Chip Pecan Pie Cookie Bars
Ingredients
Crust
1 1/2 cups flour
1/2 cup butter, softened
1/4 cup packed brown sugar
Filling
3 large eggs
3/4 cup light corn syrup
3/4 cup sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 3/4 cups semi-sweet chocolate chips
1 3/4 cups coarsely chopped pecans
Instructions
Preheat oven to 350°
Use a fork or pastry cutter to combine flour, butter and brown sugar in a small mixing bowl until crumbly. Press the crust mixture into the bottom of a well-greased or sprayed 13 x 9 inch pan. Bake for 10-12 minutes or until lightly browned. (Leave the oven on.)
In a medium mixing bowl, stir together eggs, corn syrup, granulated sugar, butter and vanilla extract. Mix in chocolate chips and nuts. Pour over hot crust.
Bake for 25 to 30 minutes or until set. Cool completely in pan set on wire rack.
