Creamy Tomato Tortellini Soup

Funny story-This mug that my soup is photographed in is know in my house as Mom’s Hot Chocolate Bowl.  It really is more of a small bowl than a mug and I do often drink hot chocolate from it.  So when I put something else like soup in this mug, my family was astonished.  However, I have since gone back filling it with hot chocolate.

As much as I love hot chocolate, I love soup on a cold night for dinner.  {Of course its most likely to be followed by a small bowl of hot chocolate sometime later that evening, but I still love soup.}  This particular soup is a great week night throw it together with out a whole lot of effort.  Seriously, the most difficult part of this recipe is having to use the can opener.  So, there is no excuses not to try this one.  It is quick and easy for a cold winter night.

Creamy Tomato Tortellini Soup


1 Tbls. olive oil
2 large Cloves Of Garlic Minced
2 Cans of Tomato Sauce
2 cups Chicken Stock
2 cups Half-and-half
1/3 chopped sun-dried tomatoes
1 tsp Onion Powder
1 Tbls. dried Basil leaves
1 Tbls. dried Oregano leaves
Salt & Pepper to taste
1 (9 Oz) Package Of Cheese Filled Tortellini
1/2 cup Shredded Parmesan
additional cheese, for garnish


Cook Tortellini according to package directions and drain well.  Meanwhile, in a dutch oven or large stock pot heat the oil over medium-high heat.  Add garlic and saute until garlic is golden brown.  Be sure to watch it closely, you don’t want it to burn.  Add the tomato sauce, chicken sauce and half-and-half.  Stir well to combine.  Add in the tomatoes, onion powder, basil, oregano, salt and pepper and the 1/2 cup parmesan.  Stir continually until cheese is melted through out.  Bring soup just to a boil, stirring occasionally.  Once soup is at a boiling point add the cooked tortellini.  Let tortellini warm and serve immediately with additional parmesan cheese if desired.
