Watermelon, Arugula & Feta Salad Wedges

 

This has got to be the ultimate summer salad or appetizer. Healthy, delicious and super simple!  Serve these wedges alongside any summer grilled meat, or as appetizers for summer get togethers.  You get the same great sweet/spicey taste of traditional watermelon-arugula salad in individual servings.  You’re guest will love it!

 

Watermelon, Arugula & Feta Salad Wedges

1 seedless watermelon

fresh baby arugula

feta cheese crumbles

balsamic vinegar

Cut the watermelon into small triangles (about 1 inch thick).  Chop remaining watermelon into small cubes.  Layer triangles with arugula, watermelon cubes, and feta cheese crumbles.  Drizzle with balsamic vinegar {be sure to use a good quality balsamic -I used a fig balsamic}.
