Cheesy Herb Popovers

I crave bread! I make some type of bread at least a few times a week. Until one day, something tragic happened. I was out of yeast. I went to get it and it was gone. Just a few specks in the bottom of the bag.  {Gasp}   And this wouldn’t be a problem except the fact that I prefer a yeast that is not sold in your average grocery store. So, I could not run out and get some. And I know that I could have bought another brand and used it, but I didn’t.  I had to order on the computer and anxiously await the delivery truck to finally stop at my house.  It was days of anguish.

However, in the meantime I am still craving some serious carbs. What is a girl to do. Well, guess what!   Popovers use absolutely no yeast!! Seriously, it was like a lightbulb went off. So when you read the recipe, it is not a key ingredient that I forgot to list. Because it is quite possible for my brain to allow that to happen every once in a while, but this is not one of those times.  There will be some magic in your oven as you watch.  Seriously, see if you can get your kids to sit at the oven watching them bake.  I tried and they didn’t last the full 30 minutes.  {Bummer} 

So the next time you are craving carbs but find yourself with no yeast remember there is still hope. But in all reality go ahead and make these anytime.

Cheesy Herb Popovers

Ingredients:

2 cups milk
4 eggs
2 Tbls. melted butter
2 cups flour
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. thyme
1/4 tsp. oregano
2/3 cup shredded cheddar

Directions:

In a large mixing bowl, add the milk, eggs, melted butter, flour, salt, pepper, thyme and oregano. Mix together well and then add the cheese. Stir to incorporate. 

Loosely cover the bowl and let it sit for 1 hour in the refrigerator. 

After 1 hour, preheat oven to 425.  Grease a muffin tin.  {I like to use melted butter for this particular recipe, but you can use baking spray as well.}

Divide the batter among 12 muffin cups.  Bake in the oven for 30 minutes.  {Do NOT open the door while cooking.}

These can be served warm or cold.
