Avocado Club Panini



Today is the official first day of our 2 week spring break.  {Yes, I said 2 weeks.  Well, technically more than that since we have today off before the full 2 weeks.}  I am really not sure if I am excited or not.  Two weeks is a long time and I have no clue how I am going to pass the time.  I am open to any suggestions.  {Please, I need some help here.}

Lucky for me though, I am able to enjoy a delicious panini for lunch.  This is a classic!  I like using the avocado as my spread.  It is a nice change from the normal mayo or mustard.  If you don’t have a panini press you can use a skillet on the stove top.  Brown one side and then flip it over to brown the other side.

Avocado Club Panini

Ingredients:

thick artisan bread, sliced 1/2-1 inch thick
Bacon, cooked*
Deli Sliced Turkey
Provolone Cheese slices
Avocado
Salt & Pepper to taste

Directions:

Preheat panini press.  Smash avocado in a bowl with a little salt and pepper to taste.

Spread the avocado on one side of two slices of bread.  Layer cheese, turkey and bacon and top slice of bread.

Place sandwich in the press.  Panini is done when the cheese is melted and the bread is golden brown.

*Bacon can be cooked directly on the Breville Panini Press.  And as a bonus it cooks flat rather than curling up like in a frying pan, perfect for sandwiches.
