Loaded Baked Potato Soup

So here in Colorado we are getting ready to be hit by a big snowstorm. It is definitely cold outside and the last forecast I heard was upwards of a foot of snow over the next couple of days and blizzard like conditions. {Insert sympathy here} So what could be better than a bowl of warm soup on one of these cold and snowy nights? Nothing comes to my mind. There is just something comforting about a bowl of soup with the family on a cold night and this one is sure to please.
As far as what potatoes to use it doesn’t matter a whole lot. I used regular potatoes that I cut into 1 inch cubes and then boiled them until done. If you have leftover baked potatoes you could peel and cut those to use. And of course, as with any recipe customize it to your tastes. More or less cheese, green onions, seasonings, etc….
Loaded Baked Potato Soup
Ingredients:
12 slices bacon
small onion, chopped
1 clove garlic, minced
1/3 cup flour
7 cups milk (Preferably not skim, but if it is all you have go ahead and use it.)
4 large potatoes cooked and cubed
2 cups shredded cheddar cheese
1 cup sour cream
1 tsp salt
1/2 tsp black pepper
1/2 tsp white pepper
green onions, sliced (tops too)
Directions:
In a dutch oven, cook bacon until crisp. Remove from pan and drain on paper towels. Reserve bacon grease and saute the onion and garlic about 5 minutes. {Doesn’t this smell so good?}
Whisk in flour, salt and pepper until smooth. Gradually stir in the milk. Whisk constantly until thickened and no lumps remain. Stir in potatoes and bring to a boil. Stir frequently to avoid scorching on the bottom.
Reduce heat and simmer 10 minutes. Mix in sour cream and cheese. Stir until cheese is melted throughout.
Serve with additional cheese, green onions and bacon on top.
*This is approximately 6 servings, so you can adjust your amounts more or less depending on how many you are serving.
