Glazed Lemon Cookies
Get ready for a spring party in your mouth. These little cookies boast a light lemon flavor that is sure to please. We are finding our way through Spring and are quickly gaining on Easter. I often consume a few too many Lemon desserts in the months or March and April. This is just one more to add to the collection!
Glazed Lemon Cookies
Ingredients:
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
1-2 tablespoons lemon zest
1 cup unsalted butter, at room temperature
1 egg
1 teaspoon vanilla extract
1 Tablespoon lemon juice
Glaze:
1 cup powdered sugar
3-5 teaspoons fresh lemon juice
Directions:
Preheat the oven to 350.
Combine flour, baking powder, and salt in a separate bowl. Whisk and set aside. In a small bowl, add granulated sugar and lemon zest. Stir them together with a fork pressing the two together until fragrant.
Beat butter and sugar/lemon mixture together until light and fluffy. Beat in egg, vanilla and lemon juice. Slowly add in the flour mixture on low speed until blended. Drop dough by tablespoon onto ungreased baking sheets, spacing 2 inches apart. Gently flatten dough.
Bake for 11-13 minutes or until cookies are just set and slightly golden brown. Cool cookies on baking sheet for 2 minutes and transfer to cooking racks. Cool completely.
To make the glaze: In a medium bowl, whisk together powdered sugar and lemon juice. Dip each cookie top into the lemon glaze. Let cookies sit until icing has set.
