Kitchen Talk: How to Segment Grapefruit and Oranges
So did you go buy grapefruit to make the Winter Citrus Salad we featured yesterday? If not you should go now {it’s that good}. And in case you’re not sure how to segment those grapefruits once you get them home, here’s a little “how-to” to help you out! {Note to self: I really need to figure out how to make a video and upload it -would have worked so much better. Hmmm . . . another New Year’s Goal.}
You can segment your oranges and grapefruit for the Citrus Salad, but once you get the hang of it, you won’t want to save it just for that. Serve it for breakfast {look how pretty it looks} or fill a trifle bowl with layers of ruby-red grapefruit and oranges at your next brunch – it tastes amazing and it’s a little more unexpected and unique, not to mention it’s much less pricey than berries right now.
How to Segment Grapefruit and Oranges
First – here’s how I do it, then I’ll show you another way!
1. Cut off the peel at the stem end. You want to cut down to the fruit without wasting too much.
2. Using a sharp paring knife, slice around the fruit removing the peel and white pith.
{Of course the goal is to always cut the peel in one piece! – once you get the hang of it it really is not hard.}
3. Now you should have a beautiful piece of fruit with all the peel and pith removed.
4. Take your paring knife and cut down along the membrane on the sides of each section and then just pop it out into a bowl.
Repeat with as many grapefruits or oranges as you need
Alternative Method:
If you are not comfortable holding the fruit and cutting your way around it, just slice off the end as in step one and lay the fruit flat side down on a cutting board. Use a sharp knife to cut downward along the curve of the fruit until you have removed all skin and pith. {Sorry, the angle of the knife is a little off here, but my photographer left and I’m trying to hold it in my left hand while taking the picture- got to figure out that video . . .}
